Vegan or Omnivore My Kung Pao Combination 03/20/14

My Kung Pao Combination 

I also made this vegan for my children; they are vegan:
Gregg Jr., his wife Sara, Amber and her boyfriend Justin.

All you do to make it vegan is eliminate the meat and add extra vegetables

Ingredients :

1- package of  stew meat                           
1- package of  pork strips                    
1- package of  chicken strips
1- bottle of Kung Pao sauce (spicy)        
1- Bok choy                                           
3  1/2 cups of broccoli
3  1/2 cups of cauliflower                           
2- 8oz packages of mushrooms           
1- can of baby corn                             2 for vegan
1- can of sliced water chesnuts           2 for vegan                
1- can of Chinese vegetables              2 for vegan         
1- can of bamboo shoots                     2 for vegan
Prep time 15 - 20 minutes   
Cook time 20 - 25 minutes 

 The Kung Pao sauce I buy from Lotus Food Company  
(Penn Ave. in the strip district in Pittsburgh Pa).
The meat I buy from Shop n Save in Pittsburgh Pa (the five for $19.99). 

Start with 2/3 cups of olive oil in wok and heat until oil is hot.
Cook meats on medium heat
Add chicken (you can cut meats into smaller pieces)

 

Keep stirring until cooked thoroughly. Remove from wok and place in large bowl 
Repeat with  pork and beef  strips. After all meats are done, set aside in bowl
for now

Cook vegetables on medium heat
Add into the wok bamboo shoots, water chestnuts, broccoli, and cauliflower. Mix for about 7 minutes,
then add in mushrooms, baby corn, and bok choy, stirring until everything is hot.

 

Slowly add in meats in portions to make sure the are mixed well with the vegetables.
Now add the Kung Pao spicy sauce. Open bottle,  pour into the wok,
making an X and then straight down the center top to bottom.
Mix  thoroughly (there should be some juice at the bottom just mix it all together).

 

Now that's it's mixed thoroughly, let simmer for about 5 minutes. Then, if you like your food spicy.,
mix in 1 cup of  Thai chili sauce. And here you can add a few
Tien Tsin Chinese dried hot red chile peppers.
(Only add 2 to 3 they really make it super hot but tasty) 
Let them cook in about 10 minutes 
This particular recipe we left them out for company.
While this is simmering make your rice 
Any rice will do, we prefer instant rice.
 
 After Rice is done add to your bowl or plate throw some
Chow Mein noodles over it if you like  
and its dinner time

Tonight's dinner is my recipe for a vegan dish I call Potato Stir Fry with Sauce. 

Ingredients:
 2 - 8oz Packages of mushrooms
 2 - medium green peppers
 4 - hot banana peppers
 7 or 8 medium potatoes
1- 28oz can crushed tomatoes in thick puree
1/2 - bag of spinach (2.5lb bag)
1/2 - large yellow onion
1/2 - pound of any pasta
2 - tbsp oregano,
2 - tbsp parsley, 
2 - tbsp Italian seasoning, 
2 - tbsp crushed red peppers,
2 - tbsp basil, 
4 - tbsp garlic powder, 
Prep  time 15 minutes
Cook time 30 minutes


To start, I like to use fresh vegetables rather than caned when possible. Peel then thickly slice  two 8 oz packages of  fresh mushrooms, 5 cloves of garlic and 2 medium green peppers

 
If you like it spicy add 3 to 4 hot banana peppers. (If you don't like spicy use an additional green pepper) Cut off tops, slice down sides and rinse out seeds
then slice into 1 to 2" slices  


Take 7 or 8 medium size potatoes Wash and cut into 1 1/2 to 2" cubes.
Cut 1/2 large yellow onion in 1" pieces

Heat 1/3 cup of olive oil in a large 12 x 2 1/4" deep frying pan on high heat
(If you don't have a large  frying pan you will have to cut down on the Potatoes to 5 or 6).
Add the potatoes and onions to the pan, stirring until potatoes start to soften. Lower heat
to medium .


Add the rest of the vegetables and garlic. Continue stirring from the bottom.
Contents will cook down.

 

Add one  28 oz can of  Red Pack crushed tomatoes in thick puree


 

After mixing together, add in  fresh spinach I like to use 2.5 lb bag of triple washed
spinach from GFS  Add two hand fulls and keep stirring until it cooks down.
Continue adding two more hand fulls till you have used about 1/2 of the 2.5 lb bag

 

 

Keep stirring until spinach is all cooked In. While the spinach is cooking down, you can put 
on your pasta  that you choose to serve. Lower heat and add seasonings:
  oregano, parsley, Italian seasoning, crushed red peppers, basil, and garlic powder, 
 Let simmer until pasta is done.

  
 
Dinner Is Served
