Vegan Dinner 02/27/16

Pressure Cooker  Spicy Vegan 
Black Bean Chili
3 - 15.5 oz cans of black beans
3 - Medium green peppers diced
6 - cloves of garlic finely chopped
1- Large red onion diced
1 - 28 oz can of crushed tomatoes 
1 Tbsp sea salt
4 Tbsp chili powder 
2 Tbsp ground cumin
3 Tbsp Tomato paste
1 Tsp Cayenne pepper
3 Tbsp olive oil 
2 1/2 cups of water 
Optional 16 oz bag of frozen corn (thawed)

Drain and rinse black beans ( put aside )
Add olive oil to pressure cooker heat on browning setting
Add green peppers onions and garlic cook about 4 Minutes
or until onions start to brown stirring occasionally 
Add in salt, chili powder, and cumin 
cooking for about 2 - 3 minutes
Stir in tomato paste to coat mixture add water and
crushed tomatoes and Black beans
lock on lid and close the steam valve 
hit the soup and stew button or set time to 25 Minutes
when time goes off on pressure cooker safely release the pressure
and remove lid away from you body leave cooker on warming mode
 add in the corn mix well and let sit 5 Minutes to heat corn
Garnish with your Choice
Shredded cheddar cheese
Coarsely chopped cilantro
Tortilla Chips or Sour Cream

Omnivore Pressure Cooker Cod and Roasted Red Potatoes Fridays Dinner In Lent 02/26/16

Omnivore
Pressure Cooker Cod 
and Roasted Red Potatoes
2 Lbs Fresh Cod 
3 - 18" Pieces of Wax Paper
Garlic salt or Garlic Powder (What ever you prefer)
Black Pepper 
Soy Sauce
12 Slices Lemon 
or
(You can use Orange or Lime)
6 Tbsp of Margarine or Butter
1 Cup of water
Cut the Fish fillets in Half across 
Lay out a Piece of wax paper 
Put 2 Fillets on the wax paper 
Cover with Garlic salt or Powder
A light Cover and a heaver cover of Black Pepper 
sprinkle with soy Sauce
place 2 Lemon Slices on each Fillet
Put 1 tbsp of margarine or butter
on the center of each fillet
Fold over 1 Long end of wax paper then the other
then the sides place wax paper on a steam rack in 
Pressure Cooker 
 and repeat 2 More times with the rest of the Fillets
add Water and Lock lid in place and close steam valve on lid
Press the Fish Button or cook for 5 Minutes After the pressure builds up
 the 5 Minute count down will start
when time is done carefully release the pressure vale
then remove lid away from your face

Dinner 02/18/2016

Pressure Cooker Super Spicy Chili
2 1/2 Lbs Lean Ground Beef Split into Halfs
1/2 Cup of Olive oil
1 Medium Onion Chopped
7 Cloves of fresh garlic
10 Mini Colored Sweet Peppers Chopped
Or
1 Large Green Pepper Chopped
2 15 oz Cans of Kidney  beans
1 28 oz  Can of whole tomatoes
1/2 Tsp Black Pepper
1/2 Tsp Dried Basil
3/4  Tsp Cayenne Pepper
2 Tsp Ground Cumin
1 Tbsp Tomato Paste
3 Tbsp Chili Powder 
1/2 Cup Franks Original Red Hot
1 1/2 Cups of water
2 whole Bay Leafs 

Put 2 Tbsp of olive oil in pressure cooker press Stew / Soup button this will engage 
the browning feature brown half the ground Beef and put into separate container
drain oil from pressure cooker be careful pressure cooker pot will be hot.
You don't have to turn off pressure cooker while exchanging ground meat and oil. 
Just be Careful.
Add another 2 Tbsp of Olive oil to pressure cooker and brown 2 the second half
of the ground beef add to container with the done Ground Beef.
Drain oil into same container from first batch.
add remaining Olive oil 4 Tbsp to pressure cooker again leave it on 
Add the Onions, Garlic and peppers and stir until Onions turn a light brown.
Add the Ground Beef and the rest of the Ingredients into the pressure cooker
mix it up using a wooden or rubber spatula
 not to scrape inside of the pressure cooker Pot 
Lock the lid on set pressure valve to seal or closed
just leave the pressure cooker on when you seal it up it will set for 25 minutes
once the pressure set inside an will start to count down, Once it hits zero it is done the 
stay warm light will come on be careful  and release the steam once steam is done
open the lid away from you slowly 
Discard the bay leaves and serve
Dinner is served
I like to sprinkle American or cheddar cheese and I add a little more 
Franks Original Red Hot to my bowl
( I use that shit on everything )

Omnivore Pressure Cooker Country Style Pork Spare Ribs 02/03/16

Omnivore
Pressure Cooker
Country Style Pork Spare Ribs 
1 Large vidalia onion  Cut into 4 Thick Slices
(I use these as a rack in cooker)
6 Country style spar Ribs
1  18 oz  bottle of Baby Rays Barbecue Sauce
(only use 9 ounces of baby rays)
Weber's Savory Smokehouse seasoning 
1 Cup of water
Wash off ribs and rub the savory smoke house seasoning 
all over each Rib
coat pressure cooker with olive oil 
Place the four slices of onions on bottom of pressure cooker
or if you have a rack for inside use the rack or the onions
place the 6 ribs in the cooker
pour 1 / 2 bottle of barbecue sauce over ribs 
pour water around the out side of ribs
put the lid on and lock it in place hit the 
chicken and beef button for 25 minutes 
make your sides on stove 4 Cheese Mash Potatoes and Bake Beans
when done release pressure and let stand for 
10 Minutes
