My Brothers Birthday Cake 08/14/16

Vegan 
3 Tier
Yellow Birthday Cake 
with classic white icing, 
 Blueberries and Strawberries
Prep Time 10 Minutes
Cook Time 55 to 65 Minutes
(or box's recomendations)
2 - Boxes of Duncan Hines Yellow Cake mix
1 - Can Duncan Hines of Classic White Icing
2/3 - Cups of Vegetable oil
2 - Cups of water
1 1/2 - Cups of Unsweetened Apple Sauce 
Mix in a large bowl on low speed until moistened 
about 30 seconds 
Take your 3 Tier Pan or
 (2 - 9" round pans)
Spray with non stick spray and lightly flour pans
3 Tier pan bake for about 55 -65 Minutes
if using different size cake pans use
 recommended times on the box 
check with a knife toward the deepest part of the cake 
if the knife comes out clean it's done or add more time to baking
Let Cool completely then ice and decorate with your favorite 
fruits or cookies

A cake for Chuck and Melba's 28th Wedding anniversary

My 3 Tiered 
Semi 
Vegan 
Oreo Marble Cake
because they requested cream cheese icing
Prep Time: 15 Minutes
Cook Time 65 Minutes
With Cream cheese Icing 
and filled with Oreo's  cookies
1 -Box of Duncan Hines Classic Yellow cake mix
Add to medium bowl 
Add 3/4 cup of apple Sauce
1/3 - Cup of Vegetable oil
1 Cup of water
mix on slow for about 30 seconds
add to a 3 tier cake pan
in a separate bowl 
1 -Box of Duncan Hines Swiss Chocolate cake mix
add 3/4 cup of apple Sauce
1/2 - Cup of Vegetable oil
1 Cup of water
mix on slow for about 30 seconds
pour chocolate mix over yellow batter in zig zag lines
and with a spatula push chocolate mix into the yellow batter 
to make it marble 
Place in Oven for 55 to 65 Minutes
I Check with wooden skewers so i can check the deepest part
that it come out clean
After it fully cools Ice it
( I used Cream cheese Icing which is not vegan )
Cut Oreo's in halves and decorate 
I filled it with Oreo pieces
you can use any thing you like Strawberries or blueberries

Vegan Walnut and Raisin Zucchini Bread

Vegan
Walnut and Raisin  
Zucchini Bread
15 Minutes Prep Time 
45 Minutes cook time
325 Degrees 
In a large bowl mix
3 - cups of flour or Gluten free flour
1 - Tsp Salt
1 - Tsp Baking Soda
1 - Tsp Baking Powder
1 -Tbsp of Cinnamon 
seperate bowl mix
3/4 - Cup of apple sauce
1 - Cup of vegetable oil
2 - Cups of sugar
1 - Tbsp of Vanilla
combine the 2 bowls and mix  very well with a mixer
 or by hand 
Add  2 - Cups of shredded Zucchini
mix well 
 1  - Cups of Raisin's 
and
1 - Cup of Chopped Walnuts
Mix well 
pour into small loaf tins 
1 batch makes 5
 Mini loaf pans
or 1 and 2 mini loafs

My Easy Vegan Zucchini Lasagna

Easy
 Vegan Zucchini Lasagna 
Prep Time: 10 Minutes
Cook Time: 35 Minutes

1 - Large Zucchini
(Peeled or not and Sliced into 1/2 thick slices) 
1 -  Bag fresh spinach
(I Leave it whole or chop into smaller Pieces)
1 -  bag of Daiya  mozzarella cheese
1 - Large can of sauce 
2 - 8oz Pkg of fresh mushrooms
(Peeled and Sliced Thick)

Take a 9 x 11 Baking dish spray with non stick spray
the cover the bottom with sauce 
take strips of Zucchini and line the bottom of dish
put a layer of mushrooms and then a layer of Spinach
cover with sauce and daiya mozzarella 
and repeat 2 or 3 layers 
what ever you prefer 
Top layer leave off cheese
cover with tinfoil 
 until 10 minutes to go
then uncover and carefully 
add top layer of mozzarella
finish baking uncovered
great with home made Garlic Bread 
Easy take you favorite bread put in toaster 
until it starts to brown
 then spread Vegan Earth  balance on each piece
then Sprinkle Garlic Powder or Garlic salt
 and
 place on a cookie sheet and bake in oven 
until butter melts and it browns.
It Taste great!!!!!
