Omnivore Cheesy Veggie and Beef Casserole 01/04/17

Cheesy Veggie
 and 
Beef Casserole 
Prep Time: 25 Minutes
Bake Time:20 Minutes
Ingredients:
1 1/2 - Lbs Ground Beef
1 - Large Zucchini or 3 small ones
(Peeled and cut into small pieces) 
1 - 8 oz package of fresh mushrooms
(Peeled and Sliced)
1 - Large onion
(Peeled and diced)
5 Cloves of fresh garlic
(Peeled and minced)
1 - 8 oz bag of fresh spinach
(Washed and chopped)
1 -1  Lb box of any pasta
(Springs or rigatoni)
1 - 24 oz Jar of your favorite Pasta sauce
1 - 15 oz container of ricotta cheese
1 - 8 oz bag mozzarella cheese
1/4 - Cup of Parmesan cheese
3 - Tbsp olive oil
Garlic salt or powder
Black pepper
Oregano 
Non stick cooking spray
In a large pot bring water to a boil and add the pasta
while the water is heating up
In a large frying pan heat the olive oil
add zucchini and the onion until onions soften
mix in the garlic and cook a couple of minutes 
add in the ground beef and brown add your spices 
mix well and carefully drain oil from the ground meat
 into a old cup or can not down the drain 
add the mushrooms until the start to brown add the spinach 
until it cooks down then add the pasta sauce mix well lower the heat 
and let simmer until the pasta is done stirring occasionally not to let it burn 
when the pasta is done drain and return to the pot
Add the 15 oz of ricotta cheese to the pasta then the 1/4 cup of Parmesan 
and 1 cup of mozzarella cheese and mix well
Then add the ground beef mixture to the pasta and mix well
Spray a large baking dish with the non stick spray
pour the pasta into the baking dish and even it out 
with a wooden spoon or a spatula 
cover the top with the remaining mozzarella cheese
and bake for 20 minutes
Ready for the oven
