Tonight's dinner is my recipe for a vegan dish I call Potato Stir Fry with Sauce. 

Ingredients:
 2 - 8oz Packages of mushrooms
 2 - medium green peppers
 4 - hot banana peppers
 7 or 8 medium potatoes
1- 28oz can crushed tomatoes in thick puree
1/2 - bag of spinach (2.5lb bag)
1/2 - large yellow onion
1/2 - pound of any pasta
2 - tbsp oregano,
2 - tbsp parsley, 
2 - tbsp Italian seasoning, 
2 - tbsp crushed red peppers,
2 - tbsp basil, 
4 - tbsp garlic powder, 
Prep  time 15 minutes
Cook time 30 minutes


To start, I like to use fresh vegetables rather than caned when possible. Peel then thickly slice  two 8 oz packages of  fresh mushrooms, 5 cloves of garlic and 2 medium green peppers

 
If you like it spicy add 3 to 4 hot banana peppers. (If you don't like spicy use an additional green pepper) Cut off tops, slice down sides and rinse out seeds
then slice into 1 to 2" slices  


Take 7 or 8 medium size potatoes Wash and cut into 1 1/2 to 2" cubes.
Cut 1/2 large yellow onion in 1" pieces

Heat 1/3 cup of olive oil in a large 12 x 2 1/4" deep frying pan on high heat
(If you don't have a large  frying pan you will have to cut down on the Potatoes to 5 or 6).
Add the potatoes and onions to the pan, stirring until potatoes start to soften. Lower heat
to medium .


Add the rest of the vegetables and garlic. Continue stirring from the bottom.
Contents will cook down.

 

Add one  28 oz can of  Red Pack crushed tomatoes in thick puree


 

After mixing together, add in  fresh spinach I like to use 2.5 lb bag of triple washed
spinach from GFS  Add two hand fulls and keep stirring until it cooks down.
Continue adding two more hand fulls till you have used about 1/2 of the 2.5 lb bag

 

 

Keep stirring until spinach is all cooked In. While the spinach is cooking down, you can put 
on your pasta  that you choose to serve. Lower heat and add seasonings:
  oregano, parsley, Italian seasoning, crushed red peppers, basil, and garlic powder, 
 Let simmer until pasta is done.
